Flavors of Honduras, Straight from the Heart

Updated: Mar 31

A Taste of Home, A Truck Full of Heart: Corazón Garifuna

Sometimes a meal is more than just food. Sometimes it’s a story, a memory, a connection to something deeper than words. That’s what you feel when you eat at Corazón Garifuna, a family-owned food truck that brings the bold, soulful flavors of Honduras to the streets of Tennessee.

This isn’t just a food truck. It’s a dream on wheels.

The truck is the heartwork of Jenny Lopez and Ruth Márquez, two women who have poured their culture, their love for food, and their Garifuna heritage into every dish they serve. Jenny is the vibrant face and the food behind brand, always greeting guests with joy and passion. But it’s all home and cultural food—every recipe rooted in memory and love.

My dear friend Sue (furniture upcycler extraordinaire) and her daughter, Anneliese Francesca (who also handcrafts gorgeous jewelry for The Sparkle Effect) turned me on to the grand opening of the truck down in Franklin 2/22 and it was an absolute party, packed with family and flavor fans. Annie works on the truck alongside her bf Josh, (it’s his Mamas truck, and labor of love honoring his late father)and Annie’s favorite dish is pollo con tajadas: crispy golden plantains topped with seasoned chicken, chimol, curtido, and cheese. One bite, and you understand why this truck has become a haven for the Honduran community and beyond.

But Corazón Garifuna is more than a truck with great food. It’s a cultural bridge. It’s a place where Garifuna heritage is honored and preserved—where music, recipes, and love all come together in a styrofoam plate wrapped in foil and faith.

Their motto says it best: “El sabor de Honduras con el corazón de la cultura Garífuna” — the taste of Honduras with the heart of Garifuna culture.

And maybe that’s what this life is really about. Showing up for one another, tasting each other’s stories, and seeing Jesus in the faces of the people we meet. He didn’t reincarnate, but He does show up—again and again—in the eyes of the hungry, in the hands of the helpers, in the hearts behind trucks like this.

If you ever get the chance to eat at Corazón Garifuna, don’t miss it. Go hungry. Leave grateful. And remember that you just tasted something holy.

And to Jenny, Ruth, and the whole Corazón Garifuna family: Thank you for feeding Tennessee with so much more than food. You’re feeding souls.
